This tuna, Euthynnus alletteratus, is caught in the Mediterranean Sea using purse seine nets. After processing, the whole Little Tunny fillets are placed vertically in jars and preserved in olive oil. It features a pleasant aroma and red-colored flesh with a strong, non-fibrous flavor and excellent texture.
