The sea urchin, Paracentrotus lividus, is particularly flavorful, and its gonads are rich in roe during the fishing season. Commonly referred to as the common sea urchin or rock sea urchin, it is often mistakenly called the “female sea urchin,” due to the incorrect belief that it is the female of Arbacia lixula, which is actually a different species.
Hand-shelled using special spoons, it is immediately packed in sterile glass jars and frozen the same day.
Mediterranean sea urchin has a sweet and delicate flavor thanks to the seabed where it lives and is distinguished from Atlantic sea urchins by both its vibrant color and unmistakable taste.
Instructions for use
Defrost in the refrigerator or under running water, after which the product is ready for use.
