Product Description
The Dover sole, Solea Vulgaris, lives on sandy bottoms, where it camouflages itself thanks to its pigmentation. By hiding, the sole can live up to 20 years, reaching up to 50 cm.
It is one of the most sought-after fish on the market and is caught with trawls or with the so-called sole nets.
Its white flesh and delicate flavor make the sole a versatile fish, although the most common recipe is "sole à la Meunière," which is breaded and then sautéed in butter, accompanied by lemon and parsley.
