Ora King aquaculture facilities have achieved Aquaculture Stewardship Council (ASC) certification for environmentally and socially responsible production at their Marlborough Sounds Sea Farm facilities. King salmon are born in freshwater and spend most of their lives at sea.

To produce cold-smoked Ōra King, each fish is filleted and deboned entirely by hand, marinated with sea salt and cane sugar, and then slowly cold-smoked with Manuka wood, the native New Zealand shrub from which the prized honey is obtained.

Product Description

Ora King salmon is cold-smoked with Manuka wood. This salmon is considered the "Wagyu of the sea".

It is a rare species of King salmon, Oncorhynchus tshawytscha, which is distinguished by its intense color, delicate and slightly sweet flavor, and marbled lines of fat reminiscent of fine Japanese meat.

In New Zealand, it has been farmed since 1996 in the clear waters of the Marlborough Sounds.

A few hours after slaughter, it is examined by highly qualified personnel, selected based on size, color and quality, and immediately frozen.

Instructions for use

Once thawed, it can be stored for 15 days at a temperature between 0° and 4°.
