This tuna, *Euthynnus alletteratus* , is caught in the Mediterranean Sea using purse seine nets. After processing, the whole Little Tunny fillets are placed vertically in jars and preserved in olive oil. It features a pleasant aroma and red-colored flesh with a strong, non-fibrous flavor and excellent texture.
