Product Description
The sea urchin , *Paracentrotus lividus*, is a particularly tasty urchin, and its gonads are rich in roe during the fishing season. Commonly referred to as the common sea urchin or rock sea urchin, it is often mistakenly called the female sea urchin, under the false belief that it is the female specimen of *Arbacia lixula* , which is actually a different species.
Shelled by hand with special spoons, it is immediately packaged in sterile glass jars and frozen the same day.
The Mediterranean sea urchin has a sweet and delicate taste thanks to the seabed where it lives, and it differs from the Atlantic sea urchin both in its vibrant color and its unmistakable taste.
Instructions for use
Defrost in the refrigerator or under running water, after which the product is ready for use.
