Nephrops norvegicus are prawns caught in the cold waters of the northeastern Atlantic Ocean, between the coasts of Scotland and Ireland. These prawns are among the most sought-after crustaceans in the world for their sweet and delicate flesh.
The product, which arrives alive at the plant in Brittany, is shelled in modern high-pressure tunnels that allow all the pulp parts to be recovered without the precious crustacean being subjected to any cooking.
This pulp is ideal for eating raw, but it is also excellent for pan-frying and steaming or vacuum-cooking using the original packaging.
